Slow Cooker Recipe- Spanish Stew

It seems that summer is showing no intention of making itself known, and so as a sort of compromise we’ve welcomed a bit of Spain to our meals, whilst ensuring the warmth of a stew needed in the gale winds and rain.

  1. 2 medium onions, chopped
  2. 2 garlic cloves, finely chopped or crushed
  3. 1 tbsp olive oil
  4. 550g (4) chicken breasts, diced
  5. 225g chorizo, sliced
  6. 250mls chicken stock
  7. 450g charlotte potatoes, sliced
  8. 1 sweet red pepper, chopped
  9. 2 tsp oregano
  10. 800g chopped tomatoes
  11. 1 tbsp tomato puree
  1. Fry the garlic and onion in olive oil until soft
  2. Add the chicken and brown
  3. Put the three ingredients at the bottom of the slow cooker
  4. Add the chorizo, followed by the chicken stock
  5. Add the potatoes, sweet red pepper and oregano
  6. Add the tomatoes and puree
  7. Cook on low for 8 hours, or high for four hours.
  1. Serve with crusty bread, or add soured cream for extra comfort.
