One morning not so long ago, I took CM to a birthday party. For some reason I was expecting to stay so I found myself at a loss to know what to do when I found myself with two hours to spare. I walked along the sea front at Barry Island and saw a coffee shop. I decided, I have no idea why, to order pancakes. They were delicious. And with Pancake Day approaching I decided I had to create the same sort of delight for my children.Rather than just provide them with a stack of pancakes and toppings I enlisted the help of Series 3 Num Noms. They went down such a treat on Boxing Day that I had an inkling they would weave their magic again.
And of course they did. The children quickly identified their favourites, and I was pleased to see Maple Sugars in the favoured selection. As we needed to take our pancake topping selection seriously we decided to call in the other Num Noms in the children’s collection- because how would we cope without marshmallows on our pancakes?
We decided, that like mummy’s new favourite treat ‘Berry delicious’ was the way to go. In the case of the children, marshmallows are a necessity, in the case of mummy- maple syrup is the perfect pancake accompaniment.
In my world, having pancakes with fruit is the best in offsetting. Pancakes maybe a sweet treat but if they’re getting some of their 5-a-day then it makes it completely acceptable.
Quick and Easy American-style Pancakes
Ingredients
400g self-raising flour, sieved
100g caster sugar
500mls milk
4 eggs
Toppings of your choice
Method
Beat the eggs in a small bowl
Combine the flour and sugar.
Mix in the eggs and milk.
Whisk to a smooth consistency.
Heat a frying pan
Using a ladle, spoon on ladle into the frying pan.
Cook until bubbles form.
Flip over and cook for a further 30 secs, or until golden brown.
Stack your pancakes and add your toppings of choice.
