Lemon Polenta Cake

Lemon Polenta Cake recipeI discovered polenta cake at the Waterloo Tea Rooms, I think I have loved everything I have chosen on their menu, but polenta cake was the one thing I thought would be good to add to my repertoire. And after the nightmare of sourcing polenta grain, I hope I have created not only a delicious recipe, but by luck one that is gluten-free. And, I’m thinking without the mascarpone but with blueberries would also work really well.

  1. 225g unsalted soft butter
  2. 225 caster sugar
  3. 3 eggs, beaten
  4. 175g fine polenta
  5. 50g ground almonds
  6. 1.5 tsp gluten-free baking powder
  7. 2 lemons, zested.
  8. Syrup
  9. 2 lemons, juiced
  10. 125g icing sugar
  11. Filling
  12. 225g raspberries
  13. 250g mascarpone
  14. 200mls fromage frais
  15. 1tbsn icing sugar
  16. 1tsp vanilla essence
  1. Preheat the oven at 170 degrees celsius (fan oven) or 190 degrees celsius.
  2. Beat the butter and caster sugar until creamed.
  3. Gradually add the eggs (add 1tsp ground almonds to prevent split).
  4. Combine the polenta, almonds and baking powder.
  5. Fold dry mix into the wet mixture.
  6. Add zest and combine.
  7. Pour mixtures into two x 20cm sandwich tins.
  8. Bake for 30mins or until shrunk away from sides of tin.
  9. Cool in tin for 5mins.
  10. Whilst cooling, boil lemon juice and icing sugar until fully combined.
  11. Prick the top of the cake all over, pour the warm syrup, leave to cool before removing from tin.
  12. Cool cakes completely on a cooling rack.
  13. For the filling, combine the mascarpone and fromage fraise.
  14. Add the sugar and vanilla essence and fold in.
  15. Spoon the mixture over the cake and scatter on the raspberries. (Alternatively, roughly mash the raspberries with a fork and fold into mascarpone)
  16. Add the top sponge.
