For this week’s Great Bloggers Bake Off Challenge I thought I’d try Biscotti, unfortunately I got home late from work so missed the useful tips which the Bake Off might have provided.

My attempt at Biscotti definitely met my brief-nutty, refreshing, and with the added white chocolate dip- it offers a great sugar boost to accompany the caffeine from the must have morning coffee. A safe bet to keep in a jar on your desk for as short a time as they last (I’m trying to limit myself to one day…).

Lemon & Almond Biscotti with white chocolate

  1. 300g plain flour, sifted
  2. 1 tsp baking powder
  3. 1 tsp bicarbonate of soda
  4. 3 medium eggs
  5. 200g caster sugar
  6. 1 lemon, zested
  7. 80g almonds, roughly chopped
  8. 1/2 tsp almond essence
  9. 200g white chocolate
  1. Mix the flour, bicarbonate of soda and baking powder in a bowl.
  2. In a large mixing bowl, beat the eggs and sugar until light and fluffy.
  3. Add the lemon zest, and gradually add the dry mix until fully combined.
  4. Stir in the almond essence and almonds.
  5. Knead into a dough, wrap in cling film and rest in a refrigerator for 30 minutes.
  6. Preheat the oven to 160 degrees celsius.
  7. Shape into a log, approximately 2cm thick, and place on the baking sheet.
  8. Bake for 35 minutes or until golden brown.
  9. Cool for 5 minutes and cut lengthways and then into slices around 2cm wide.
  10. Lay on the sheet, cut side up, and bake for 25 minutes.
  11. Leave to cool to room temperature.
  12. Melt chocolate in a bain marie or in a microwave.
  13. Half dip biscuits into the chocolate or swirl the chocolate over the biscuits.
  14. Leave to dry, and enjoy.

    mmmmmm look at that what chocolate! i bet they were very tasty and sweet – yum! well done for making it despite missing the show , they do look good.
