Blueberry & Banana Breakfast Muffins Recipe

Whilst I try to have more mornings at home than not, it’s inevitable that a few mornings see me leaving the house before 6 and begging a vendor for coffee as I change trains at Cardiff. Granola is perfect for breakfast at home, and this recipe is perfect for breakfasts on the go. Another recipe which hopefully balances taste with energy, and on this (fortunately) the hubby and I agree.

At home or wrapped in a serviette and popped in your bag to enjoy on the train, eat it as you walk, or pop it in the car and enjoy five minutes after the children are dropped off at school, it just works!

  1. 2 medium eggs
  2. 100mls almond milk (or cows milk)
  3. 150mls low fat vanilla yoghurt
  4. 4 tbsps sunflower oil
  5. 2 ripe bananas, mashed
  6. 4 tbsps honey
  7. 1tsp vanilla extract
  8. 150g wholemeal plain flour
  9. 50g wheatgerm
  10. 50g rolled oats, plus extra for sprinkling
  11. 1.5 tsp baking powder
  12. 1.5 tsp bicarbonate of soda
  13. 1.5 tsp ground cinnamon
  14. 100g blueberries
  15. 50g poppy seeds
  16. 50g pumpkin seeds
  17. 50g sunflower seeds
  1. Preheat the oven to 160 degrees celsius (fan oven) or 175 degrees celsius.
  2. Line a twelve hole muffin tin.
  3. Mix eggs, milk, yoghurt, oil, banana, honey and vanilla in a bowl.
  4. In a separate bowl add dry ingredients (holding back pumpkin and sunflower seeds) and combine.
  5. Pour wet ingredients gradually and combine until smooth.
  6. Divide into muffin cases.
  7. Sprinkle extra oats and seeds.
  8. Bake for 25-30 minutes.
  9. Cool and store in an airtight container.

      It is good to find a few healthier options rather than the usual pastries!
