Fresh Blackberry and Almond Muffins

Whilst my children don’t seem to be able to tell the time or know what day it is, when it comes to blackberry picking they seem to have an inbuilt calendar. Fortunately I have Timehop, which means I get to verify their information, reluctantly agreeing they’re correct. Freshly picked blackberriesWe’re really fortunate, there’s a fantastic walk to a nearby beach which involves lots of blackberry bushes, and our daily route for walking the dogs also passes a fair few. So when presented with a considerable amount, as well as jam we’ve perfected a few signature bakes. With a key criteria. This works really well in their lunch-boxes or to offer as gifts to our neighbour – who once told my children how much they loved blackberries, and have regretted their words ever since.Blackberry and Almond Muffins

A delicious recipe to make use of blackberries, incorporating almond and yoghurt.

Ingredients
  1. 100g/ 4oz butter
  2. 250g/ 9oz self raising flour
  3. 1 tsp bicarbonate of soda
  4. 100g/ 4oz golden caster sugar plus 2 tsp for sprinkling
  5. 100g/ 4oz blackberries
  6. 50g/ 20z ground almond
  7. 2 medium eggs
  8. 150mls/ 5 fl oz low fat vanilla yogurt
  9. 2 tbsp milk
  10. 3 tsps toasted almonds for sprinkling
Instructions
  1. Preheat oven to 200 degrees celcius/ 400F/ Gas Mark 6.
  2. Line a 12-hole muffin tin with paper cases.
  3. Melt butter, leave to cool.
  4. Sieve flour and bicarbonate of soda into a large mixing bowl.
  5. Add sugar and ground almond and combine.
  6. Carefully mix in blackberries.
  7. Make a well in the centre of the mixture.
  8. In a separate bowl, beat eggs with a large whisk until smooth.
  9. Beat in yogurt, milk and melted butter until completely mixed.
  10. Add the liquid into well of dry mixture, fold in with a metal spoon until very lightly mixed.
  11. Spoon mixture into paper cases, sprinkle caster sugar and toasted almonds on the top.
  12. Bake in oven for 20mins or until risen and golden brown.
  13. Leave to cool and enjoy.

Blackberry & Almond Muffin
Our second favourite, which is great for family dinners and again based on a cranberry, coconut and white chocolate version, is a traybake. It’s a bit like a crumble I guess, I think it would be great with custard, if only my children liked custard. Blackberry and Almond Traybake

Ingredients
  1. 150g self raising family
  2. 25g oats
  3. 280g soft brown sugar
  4. 200g softened butter
  5. 350g blackberries
  6. 100g ground almonds
  7. 2 medium eggs, beaten
  8. 2 tbps toasted almonds
Instructions
  1. Preheat oven to 180 degrees celcius/ Gas mark 4.
  2. Tip flour, oats and sugar into a large mixing bowl.
  3. Add butter into mix and combine using finger tips.
  4. Stir through ground almonds.
  5. Fill a teacup with the mixture and put to one side.
  6. Stir in the eggs to fully combine.
  7. Spread the mix over the bottom of a baking dish.
  8. Smooth surface with a sppon.
  9. Add the blackberries evenly across the base.
  10. Distribute the remaining mix from the tea cup across the blackberries.
  11. Bake for 40 minutes or until golden brown.
  12. Leave to cool and cut into squares.
  13. Enjoy!
